Menu pancreatitis

Pancreatitis is a disease of the pancreas, in which the cells of an organ are destroyed by its own enzymes. In the exacerbation phase, the glandular cells are destroyed, in the remission phase, connective tissue is formed where the cells die. This greatly interferes with the work of the pancreas. The most common causes of pancreatitis are alcohol abuse and eating disorders, and therefore treatment should begin with nutrition.

Nutritional recommendations for each patient should be selected individually, depending on the severity of the condition, disease phase, food intolerance, and concomitant illness. The menu below for pancteatitis is appropriate for the remission phase (i. e. , for periods when there are no exacerbations), and will help to prevent subsequent exacerbations.

Basic principles of the menu for pancreatitis:

  1. The purpose of the diet is to improve the work of the pancreas, to reduce the burden on the digestive system.
  2. Restriction of moderate carbohydrates - sweets, baked goods, sugar. Sugar is partially replaced by xylitol or sorbitol. Of the allowed sweets - marmalade, honey, jam.
  3. Fractional diet - 5-6 times a day.
  4. Cooking - steamed, baked and boiled. You need to clean meats and vegetables rich in dietary fiber (carrots, broccoli, cabbage, fresh herbs).
  5. Dish temperature is normal, cold dishes are not included.
  6. During the remission period, the menu can include vegetable soups and cereals in the diet. At the same time, the vegetables must be well boiled.
  7. You can use meat, skinless chicken, low -fat fish, boiled and roasted. Do not use offal (liver, kidneys, brain), smoked meats, salted fish, caviar, sausages, canned foods.
  8. Of the allowed dairy products - cottage cheese (up to 20%), milk, sour milk drinks, sour cream in a plate.
  9. Eggs are recommended for use in the form of omelets or soft boiled. It is better not to use fried eggs or boiled eggs.
  10. At the stage of remission with pancreatitis, it is necessary to include a variety of vegetables and fruits in the diet in the form of raw, roasted, boiled, stewed. During periods of exacerbation, fresh vegetables and fruits are not included.
  11. Drinks - weak tea, coffee with milk, rosehip broth and fruit drinks diluted in half with water, fruit juice without sugar. Not included - black coffee, cocoa, carbonated drinks.
  12. Do not use foods that stimulate the digestive system: spinach, red beans, carrots, radish, garlic, mushrooms, pickled vegetables, sour fruits.
  13. Beware of spicy seasonings - carrots, mustard, pepper. You can use - dill, parsley, basil, cinnamon.
  14. Alcohol with pancreatitis is strictly contraindicated.

Monday

dishes for pancreatitis on Monday

Breakfast:sweet pilaf with dried fruit;

Dinner:chicken soup noodles; zucchini and eggplant baked in the oven with cheese;

Afternoon snacks:milkshakes with strawberries and bananas;

Dinner:halibut fillets in the oven.

Nutritionist comments:

To make sweet pilaf suitable for patients with pancreatitis, exclude nuts, cranberries and reduce the amount of sugar to 1 tbsp.

We add vegetables to the soup without frying, this will reduce the load on the pancreas.

Hot spices must be excluded from the recipe.

I recommend choosing milk for cocktails with a fat content of not more than 2. 5%, and for coffee, it is better to exclude it from the recipe, it is not recommended to use this product with pancreatitis.

You can use any method to prepare halibut fillets, both are fine in case of illness. You can choose side dishes with cereals, for example boiled buckwheat, or vegetables - cauliflower, broccoli, potatoes, zucchini, etc. Choose a method of cooking vegetables that does not overshadow the taste of the fish or provoke an irritating taste, for example, boiled or steamed vegetables.

When cooking zucchini, try not to use hot spices and garlic, and it is better to just boil the vegetables to fill a little water or broth.

Nutritionist comments:

For the spice porridge, you can just use cinnamon; better reject ginger and nutmeg.

Unfortunately, you should also give up walnuts in a carrot salad, this is a heavy food for the pancreas, but you can add dried fruit to the salad, for example, dried apricots or a handful of raisins.

Sunday

Breakfast:boiled eggs;

Dinner:kulesh; zucchini stuffed with rice;

Afternoon snacks:banana oatmeal smoothie;

Dinner:pangasius fillet in a slow cooker.

Nutritionist comments:

You can add fresh vegetables or a few tablespoons of boiled rice for breakfast.

To make kulesh more suitable for our menu, the vegetables should be boiled with a little water or broth. Try to choose beef without veins and ties.

When cooking zucchini, you must push the garlic, and do not fry the vegetables, but boil them with a little water or broth.
